Avocado Smoothie
A simple creamy avocado smoothie for a healthy breakfast or snack.

Ingredients
- 1/2 avocado large
- 1 1/2 cups cold milk of choice
- 1 tsp pure vanilla extract
- 2 tbsp pure maple syrup or stevia to taste sweetener of choice
- 1/8 tsp salt
- 1 scoop protein powder optional
Instructions
- Peel the avocado and discard the pit.
- Blend all ingredients until completely smooth. Feel free to blend in a few coconut milk ice cubes for a super thick and ice-cream-like shake if desired. (To make coconut ice cubes, just freeze canned coconut milk in an ice cube tray. Do not add regular ice cubes, because that would dilute the flavor of the smoothie.)
- Serve cold.

Avocado Toast
This is the easiest—and the last—avocado toast recipe you'll ever need to know. Memorize the recipe, then use it as a jumping off point for your favorite avocado toast riffs. Put an egg on it, top it with tuna salad or crown it with fluffy alfalfa sprouts for a healthy and satisfying meal. You can mix up the toppings too—we love Japanese furikake or everything bagel seasoning.

- 1/2 small avocado
- 1/2 tsp fresh lemon juice
- 1/8 tsp kosher salt
- 1/8 tsp freshly ground black pepper
- 1 slice whole grain bread toasted
- 1/2 tsp extra-virgin olive oil
- Maldon sea salt flakes or red pepper flakes for garnish optional
Instructions
- In a small bowl, combine avocado, lemon juice, salt, and pepper. Gently mash with the back of a fork.
- Top toasted bread with mashed avocado mixture. Drizzle with olive oil and sprinkle over desired toppings.

Avocado Chocolate Mousse
This secretly healthy chocolate avocado mousse will take you completely by surprise.

Ingredients
- 2 avocados (240g) ripe
- 1/4 cup cocoa powder
- 1/4 cup dutch cocoa OR melted chocolate chips
- 3-4 tbsp milk of choice
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- 1/4 cup pure maple syrup sweetener of choice to taste
Instructions
- Combine all ingredients in a blender or food processor until completely smooth.
- I used 3 tbsp almond milk, but if you’re not using a liquid sweetener then you might want to add a little extra for a smoother consistency.
Notes
**You have two options for this recipe: The version with the chocolate chips will be richer; the version with the Dutch cocoa (important to use Dutch) will be lower in fat and sugar.

15 MINUTE CREAMY AVOCADO PASTA
Creamy, thick, and rich with lots of garlic flavour and a hint of lemon, this is one of my favourite pasta dishes. The avocado works wonderfully in this recipe to create a sauce so creamy and thick you will think there is cream hiding in there.

Ingredients
- 9 ounces uncooked pasta (255 g)
- 1 medium garlic clove
- 1/4 cup lightly packed fresh basil leaves plus more for serving
- 1-2 tbsp fresh lemon juice (5 to 10mL)
- 1 tbsp extra-virgin olive oil (15 mL) plus more if needed
- 1 medium avocado ripe pitted
- 1 tbsp water (15 mL)
- 1/4 to 1/2 tsp sea salt
- Freshly ground black pepper
- Lemon zest for serving
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to the instructions on the package. For a lighter option, serve the avocado sauce with zucchini noodles.
- While the pasta cooks, make the sauce: In a food processor, combine the garlic and basil and pulse to mince. Add the lemon juice, oil, avocado, and 1 tablespoon water and process until smooth, stopping to scrape down the bowl as needed. If the sauce is too thick, add a bit more oil. Season with salt and pepper to taste.
- Drain the pasta and place it back in the pot. Add all of the avocado sauce and stir until combined. You can gently rewarm the pasta if it has cooled slightly, or simply serve it at room temperature.
- Top with pepper, lemon zest, and fresh basil leaves, if desired.
Notes
TIP:
- Because avocados oxidize quickly after you slice them, this sauce is best served immediately.
- Make it grain-free: Serve this avocado sauce with spiralized or julienned zucchini or on a bed of spaghetti squash.

Authentic Guacamole
A tried and true guacamole recipe that's easy to make, uses fresh ingredients and is loaded with flavor. It's the best guacamole dip hands down.

Ingredients
- 3 avocados ripe
- 1/2 small yellow onion finely diced
- 2 tomatoes diced
- 3 tbsp finely chopped fresh cilantro
- 1 jalapeno pepper seeds removed and finely diced
- 2 garlic cloves minced
- 1 lime juiced
- 1/2 tsp sea salt
Instructions
- Slice the avocados in half, remove the pit, and scoop into a mixing bowl.
- Mash the avocado with a fork and make it as chunky or smooth as you’d like.
- Add the remaining ingredients and stir together. Give it a taste test and add a pinch more salt or lime juice if needed.
- Serve the guacamole with tortilla chips.
Notes
TIPS
- Look for large avocados for this recipe. If you can only find small avocados, feel free to add one more!
- Definitely use fresh limes rather than lime juice in a bottle. The flavour difference is worth it. And speaking of limes, I’m using Mexican limes which give about 1 to 2 tablespoons of juice.
